This coffee is produced by the Betti family on Sítio Maranhão, in the volcanic region of Caldas, Sul de Minas, at altitudes ranging from 1,100 to 1,200 meters. The farm spans 9.7 hectares and cultivates Red Catuaí, Yellow Catucaí, Icatu, and Mundo Novo.
Harvest takes place from June to August. The cherries at Sítio Maranhão are generally harvested manually, with careful separation by plot and ripening stage.
Cherries are delivered to the paved patio for drying. In 2023, they installed a small raised bed. This way, they allowed cherries from plots with slower maturation to fully develop their potential. They also invested in a static dryer, complementing their careful natural processing methods. Cherries in the raised bed take twice as long to dry, approximately 30 to 40 days, before resting for 15 to 20 days prior to delivery.
